Apple Dumplings

I found this recipe for Apple Dumplings on KSL and they turned out pretty good. The one bad thing about working all the time, is my food goes from the oven to a tupperware and then reheated in the microwave at work. It's rare when I can eat something right out of the oven.
Ingredients:
  • 6 small apples (3 inches in diameter)
  • Sugar
  • Cinnamon
  • Nutmeg
  • Butter
  • Pie crust
  • Vanilla sauce (recipe below)
Method:

Place pastry dough on a lightly floured surface. Roll until dough is 1/8 inch thick. Cut dough into six 6-inch squares. (One square for each apple)

Core and peel each apple. Place one apple in the center of a square of pastry dough. Pour sugar into the hollowed out core. Sprinkle generously with cinnamon and nutmeg. Place a pat of butter on the top.

Bring corners of pastry dough to the top center of the apple. Pinch the dough together at the seams, enveloping your apple inside the dough. You can use a little water to moisten the edges of your pastry dough, if needed. Repeat process for each apple. Place apple dumplings in a baking dish. Bake at 375 degrees for 40-45 minutes, or until golden brown.

Serve warm with a generous portion of vanilla sauce poured over the top. Tastes great with vanilla ice cream, or even in a bowl with a little milk poured over the top. Delicious!

Vanilla Sauce
Ingredients:
  • 1 c. brown sugar
  • ½ c. butter
  • ¼ c. evaporated milk
  • 1 t. vanilla
  • 1 pinch salt
  • 1 pinch nutmeg
Method:

Combine ingredients in a small saucepan over medium heat. Cook, stirring until thickened.

All Caught Up

Ok, the summer is far over and the fall semester has begun. I'm warning you, there are a ton of pictures in the next several posts. Landon and I had a fun, full, filled summer. Both familys were great to us, they let us do our laundry at their houses and would send us home with food from their gardens as well as feed us meals while we would visit. We couldn't ask for better familys.

Olivia Hoellein

Olivia was born July 16, 2009. Exactly 22 years after Landon. She is such a little doll and takes after her mom. Bonnie and Joel are way cute parents.
Bonnie and Joel bought their first home in Logan a few weeks before Olivia was born.
I'm not sure what is wrong with my dad, but he looks creepy in this picture.
This is a lot better picture of my dad, where he isn't trying to sneak in the picture. How precious, Daddy Daughter.

What an adorable little Family.

Who Would Have Guessed?

Landon went on his mission to Finland. His favorite companion was Elder Jared Mecham. Jared came home to have hip surgery and is now going to school at B.Y.U.

Looks like they had a lot of fun on their missions. Jared can rip a phone book in half. I am not lying.
Well, needless to say, He began dating my little sister and they are getting married November 13Th.

They are such a cute couple.

Fun and Games

Dad and Landon have enjoyed playing tennis with eachother. After trying to playing with me, he found someone who can actually hit the ball back :)


Landon was playing with Abby and pretending the dog was a horse (Don't worry no one was hurt)

She was so cute with her Cow Boy boots on.


Every time Landon and I have ever gone bowling (ok so only 2 times) I WIN.



One night Landon and I went bowling up at W.S.U and then rented a movie, It was a fun date.

Wake Boarding

Landon didn't want to spend every Saturday morning studying, so we would wake up at about 6 am so that we could hit some good water.

Here is father Scott sporting off his Jack Sparrow Hat. He was so nice to take us boating all Summer.

Mother Theresa also enjoyed coming to get some wind through her hair. She would bring along the blankets and treats.

These pictures are embarrassing. Don't think I saved the best for last, because I didn't. It was horrible. Landon had to get into the water with me to help. You can see how awkward my body looks as I try to keep my body up. I am going to stick with the tube and ski's. (No pics of skiing, but I can do that no problem).

Affordable Summer Fun

During our one week break of school, Landon and I took a hike up Waterfall Canyon.


On the back of this Frosted Flakes box was a list of Affordable summer fun activities. At the end of the summer I was reading it and realized I had done everything on it. I cant read it and don't remember what it says. But I do know that I had a fun summer.



Car Show and Birthday

My Grandma Griffiths lives in South Jordan, her room looks over the S. Jordan Temple. Her birthday happened to be the same day as the car show.
Landon and I met up with Rubys family, cousins, Aunts, and Uncles.


There were way cool looking car. This one is Landons dream car. There were also clowns, snowies, food, music and entertainment.

Biddulph Reunion

Landons maternal side of the family the Biddulphs get together often for some family fun. This summer for the reunion we went camping. Landon is the 2nd to oldest of the cousins, so there were lots of little one running around and lots of fun. The family bought this blue spruce tree and had premision to plant it. So now if we ever go back up to that same place we can see its growth and know that that is Our family tree.


The dentist of the family has to take a shower everyday :) So you can see in the back ground the shower that Uncle Dustin put together.

Landon, his brother Mike and uncles played a mean game of Horse Shoes.


Rafting the river is one of my favorite things to do.

All the girls went 4-wheeling one of the days. When we got back this is what we all looked like. Dirt all over our faces. Can anyone tell that they are sisters?

The 3 young married couples were in charge of cooking breakfast one morning(father Scott helped :). So we made Mountain Mans Breakfast in the dutch oven. It was so good.
At night Landon would play his guitar while everyone sang along.Aden and Marshall are the 2 new additions to the family.
